Chef Steve, the founder of Urban Umami, brings over 20 years of expertise in handling premium fish and fresh ingredients to every dish he creates. Starting as a sushi apprentice at Hama Sushi in Venice Beach, Los Angeles, and Chef Steve mastered traditional Japanese techniques while incorporating modern culinary creativity. After graduating from Le Cordon Blue in 2009, he went on to build his career in top restaurants across Los Angeles, Dallas, and Washington, D.C.
His proven success is reflected in his ventures, including Sushi Rock in Arlington, Virginia (est. 2012) and Sushi Hatch Washington, D.C. (est. 2018). On April 8, 2025, Sushi Hatch was recognized as ‘The Best Sushi Restaurant in the DC Area” by Washington Magazine. Both restaurants have earned loyal followings for their exceptional quality and commitment to authenticity.
As Chief Operating Officer of Urban Umami, Julio oversees the company’s daily operations with a focus on efficiency, quality, and sustainable growth. With a clear and hands-on leadership style, he manages everything from logistics and team coordination to customer experience and flawless execution of catering events. His goal is to ensure that every detail,from the kitchen to delivery,reflects the premium standard that defines Urban Umami.
